[Women] Rebecca's recipe

My mother worked so many hours that her serious cooking was largely confined to the weekends and generally involved meat. So--my recipe contribution is my revision of a dessert from an old Rodale cookbook that was a favorite of my first husband. It has the advantage of being super-quick and idiot-proof (good things as I am not much of a cook). The original uses pumpkin, Eggbeaters, and evaporated skim milk; I use butternut squash and whole eggs from the farmers market.

2 cups cooked squash (I stab a whole squash a few times and stick it in the microwave for fifteen minutes or or so--much easier to peel when already cooked.)
4 eggs
1 cup evaporated milk
1/2 cup maple syrup
cinnamon or pumpkin pie spice (I bought two jars from Penzeys when they started their Trump protest sale.)

Mix all ingredients together, pour into a glass pie pan, and cook in the microwave for 20 minutes. Top with whipped cream or maple syrup.
