READING  (Grace  from Earth Prayers)  Thich Nhat Hanh

Beginning to Eat:
	With the first taste, I promise to offer joy.
With the second, I promise to help relieve the suffering of others.
With the third, I promise to see others’ joy as my own.
With the fourth, I promise to learn the way of non-attachment and equanimity.

Finishing Your Meal:
	The plate is empty.		My hunger is satisfied.
I vow to live for the benefit of all beings.

Washing the Dishes:
	Washing the dishes is like bathing a baby Buddha.
The profane is the sacred.  Everyday mind is Buddha’s mind.

( It is told by his companions, 
that Thich Nhat Hanh could take an hour to wash a single teacup. )


Yogurt Corn Bread  (recipe by Neva Rees)
2 eggs		1/4 Cup Sugar		1 Cup flour		
2 tsp baking powder		1/2 tsp baking soda  &  1/2 tsp salt
2/3 Cup corn meal	1C yogurt 	1/4 C melted butter 	
Beat eggs and add sugar, mix well.  Sift together flour, etc. -corn meal.
Add alternating with yogurt to the egg mixture, stir in melted butter.
Turn into a 10 inch iron skillet and bake @ 400 degrees for 25 minutes.

Pumpkin Pie   (adapted from the canned pumpkin label)
3/4 Cup or more (granulated sugar:  brown, white, molasses, agave)
1 tsp ground cinnamon       1/2 tsp salt		(spices more or less- nutmeg?)
1/2 tsp ground ginger	1/4 tsp ground cloves 
3 large eggs
1 can (15 oz) 2 Cups pumpkin puree
1 can (12 oz) evaporated milk
1 unbaked 9-inch  deep-dish pie shell - pre-cook (5-10 mins) to seal it.

Mix sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.  (I like a blender for frothy)  Pour into pie shell.

Bake in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; 
bake for 40 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate.  Whipped cream optional.

Energy Density is your grandmother’s diet, and it still works.
	Foods that have a lot of bulk for the calories they deliver can satiate better, and lead to lower overall consumption, than foods that are more calorie-dense.  It works because as your grandmother could have told you, it fills you up.
It’s not just the physical sensation, of course;  your endocrine system also gets into the act with its satiety signals.  And you get a big assist from your brain, which tends to calibrate “enough” by sight.  I like energy density because it’s the Unitarianism of diets.  It doesn’t prescribe foods and it coexists with just about all the other diets.  Almost regardless of how you’re eating — low-carb, keto, low-fat, paleo — you can focus on whichever foods in those diets are low in calorie density.  As an adjunct to other diets, it can amplify their effect.
3 Things make food less calorie-dense:  Water,  Fiber, and Air.
If you want to make it easier to eat what you intend to, and no more, pump up the volume.
